The story

Fischrestaurant Kulmer in Birkfeld: Four Generations of Austrian Fish Cuisine

A Four Generation Legacy in the Kitchen

Fischrestaurant Kulmer in Birkfeld has anchored its kitchen to Austrian fish cuisine traditions since 1722. Franz Kulmer passes culinary techniques to his daughter Sophie, who took over the operation at the start of 2025. Their approach blends centuries-old local recipes with precise Far Eastern methods. This dual focus shapes every plate that leaves the pass, keeping the cooking grounded in regional waters while exploring new flavor profiles.

Signature Preparations from Pond to Plate

The menu highlights the versatility of their own salmon trout. Guests often order the sashimi version rolled in sushi rice and seaweed, which arrives alongside fresh coriander sesame pesto. Whole trout fried golden brown in butter remains the steadfast house signature, cooked exactly as generations have done. Smoked variations like the cold-smoked trout with cranberry horseradish sauce round out a menu that honors both Austrian fish cuisine standards and global techniques.

Retro Charm and Natural Waters

The dining room carries a quiet retro chic aesthetic that feels comfortably unforced. Visitors gather around wooden tables while staff pour wine and clear plates with steady hands. The fish itself travels directly from glass clear ponds fed by Alpine mountain streams into the kitchen. Critics at Gault&Millau have noted this straightforward charm alongside the food quality, awarding the establishment twelve points in their recent guide for delivering consistent, properly prepared meals.

Retro-Chic at Rossegger's Waldheimat: The cozy interior is slightly out of date, but that's exactly what gives this restaurant its charm. Fish from their own farm is highly recommended. The mixed appetizer platter offers a great overview of all the fish starters – sharing is a good idea, as the portions are generous. However, it's hard to share the salmon trout sashimi – it's our favorite. Sharing is easier with the house-style trout: two whole trout are served, perfectly prepared.
