Ellmau in Tyrol offers not only "The Mountain Doctor" but also spa and culinary delights. The best example of this is the complete package at the Hotel Kaiserhof, located above the village. As a welcome from the kitchen, an exquisite wild game consommé is served with baked rowanberry noodles. This is followed by pickled sea bass with caviar and a watercress foam soup. A tribute to the adjacent hunting grounds is the open lasagna with hash from young roebuck and fir tip crème fraîche. Picture-perfectly presented is the calf fillet crépinette with veal jus and airy potato dumpling pastry. When it comes to wine pairings, you are in excellent hands with the recommendations from Maître Karl Rotheneder.
