The story

Hilberger’s Beisl Kaprun: Grounded Austrian Cooking Since 1996

Roots in the Pinzgau mountains

Hilberger’s Beisl in Kaprun has served grounded Austrian cooking since 1996. Chef Christopher Hilberger guides the regional kitchen alongside his family, building every dish around short supply chains and respectful sourcing across the Alpine valleys. Local producers like Holzmeister Biohof provide the beef and veal, while Wilde Natur supplies the wild meat that anchors their seasonal menu. This dedication to local produce earned the restaurant a notable 12 rating from Gault&Millau.

Wild game and seasonal plates

The culinary approach favors straightforward techniques that let local ingredients speak for themselves. Diners typically begin with a thin slice of chamois carpaccio dressed with peppery arugula and garden herbs. Main courses rotate between pink roasted venison saddle with wild berry reduction and tender egg noodle preparations. Beetroot dumplings follow the same exacting standards before guests order quark cream and fresh strawberries.

A relaxed setting for evening service

Exposed timber beams frame tables set with heavy linen napkins, creating a space that feels lived in rather than staged. The open floor plan allows staff to move efficiently without interrupting conversations. Evening crowds often drift toward the adjoining wine bar to browse the cellar’s curated list of regional vintages. The entire operation prioritizes steady hospitality over theatrical flair.

For years, guests have enjoyed hearty regional cuisine in the cozy rooms. The welcome is friendly, and the service is professional. To start, enjoy a delicious carpaccio of Alpine ox with arugula and herbs, accompanied by a warm garlic breadstick. The tender venison ragout with egg dumplings is also excellent. A standout vegan dish: beetroot dumplings. For dessert, we opt for a delicate quark cream in a glass with strawberry purée and fresh fruit. A wide selection of non-alcoholic beverages and a well-curated wine list featuring regional specialties such as Schilcher or Uhudler.
