The story

Winkler Köstendorf: Precise Austrian Lake Cuisine on the Wallersee

The lakeside setting and culinary focus

Winkler in Köstendorf anchors its menu to the shores of the Wallersee, offering a straightforward take on Austrian lake cuisine. Guests settle into rooms that frame the water while the kitchen focuses on seasonal catch. This commitment to Austrian lake cuisine keeps the menu grounded in local waters rather than chasing trends.

Signature preparations from the kitchen

The kitchen builds its reputation around precise heat control and simple accompaniments. Perfectly fried perch or zander arrives alongside parsley potatoes and steamed root vegetables dressed in a light sauce. Poached pikeperch simmers gently in a root broth before receiving a sharp béarnaise and fresh horseradish. These techniques earned the establishment thirteen points from Gault&Millau, who noted the consistent improvement in cooking temperatures.

A celebrated dessert tradition

Appetizers like house snails or a rich crayfish cream soup set a deliberate pace before the main courses. The wine list complements these savory plates with careful selections. Every meal concludes with Salzburg Nockerln, a dessert that consistently draws strong reactions for its balanced sweetness and airy texture. The kitchen treats this classic pastry with the same quiet precision applied to the daily catch.

Restaurant Winkler is certainly not a hidden gem, but a wonderful place if you are craving local fish with a view of Lake Wallersee. For starters, we recommend the snails, the homemade fish soup, or the classic in the form of crayfish cream soup. For the main course, perfectly fried juicy fish such as burbot or pikeperch, served with parsley potatoes, steamed root vegetables, and a delicate sauce, or the flawlessly poached catfish in root broth with béarnaise sauce and horseradish. However, it was the Salzburg Nockerl that truly won us over completely. The enhancement was carefully considered in the cooking of the fish, but with the Salzburg Nockerl, it was truly realized. Everyone should find something they like on the wine list.
