The Pfeffermühle in Lech builds its entire menu around a single botanical thread. This pepper-driven approach to Austrian cuisine turns every plate into a study of heat and aroma. Gault&Millau awarded thirteen points for precisely this kind of focused storytelling. The restaurant borrows its name from a historic cabaret group, suggesting that fine food should entertain both the intellect and the palate.

The Kitchen and Its Creations

Chef Christian Wild leads the pass while pastry chef Stefanie Gürth handles the sweet course. Their tasting menu opens with a delicate Bachsaibling paired with carrot, yuzu, green shiso, and wild pepper. A second course shifts to veal served alongside crayfish, smoked bacon, and paprika dusted with mild Timut spice. Even the broth course introduces fermented Kampot pepper and Indian mountain pepper inside a Carabinero preparation.

Dining in the Arlberg

Guests settle into a space designed for quiet conversation above the valley floor. The hotel sits directly at the Rüfikopfbahn lift station, placing winter skiers and summer hikers within easy reach. Large windows frame the crisp mountain air and open vistas that define the region. Austrian cooking here feels grounded in the landscape rather than detached from it.

Entertainment at the highest level": This is how the Pfeffermühle justifies its name. The background is that Thomas Mann, the celebrated author, gave this name to his daughter's cabaret troupe. Yet the Lech-based Pfeffermühle entertains not only the mind, but also the mind AND the palate. For example, when they serve a brook trout with carrot, yuzu, green shiso, and wild pepper as an opener. Or, two courses later, veal with crayfish, bacon, and paprika. Featuring moderately spicy Timut pepper. Earlier, with the seaweed and dashi, Andaliman rainforest pepper takes center stage. The concept runs throughout the entire menu. At the Pfeffermühle, pepper plays a key role. Later dishes include those with fermented Kampot pepper, aromatic cubeb pepper, or Indian mountain pepper. The latter is featured in the Carabinero dish.
