The Verdi in Linz – for what feels like decades an institution on the outskirts of Linz – has long maintained a wonderful balance between a physically small kitchen and a culinarily ambitious one. This comes as no surprise, as Lukas Philipp, the "junior," has long proven his culinary skills: at Tantris, at Ophelia, and under Philip Rachinger at Mühltalhof. His dishes are approachable, refreshingly simple, yet remarkably engaging. Exotic touches often come into play, such as with the pork belly, where a crisp lemongrass sharpness cuts through the fat like a precise scalpel. A renovation is coming up shortly. Lukas wants to transform this compact kitchen into a full-scale one. He has already achieved this vision through his menu. Now it’s time to upgrade the cooking ranges. In short: stay tuned. The Lukas family has been firmly established in the Linz culinary scene for decades, and both restaurants reliably serve high-quality dishes. The free-range chicken egg, presented as foamy whipped snow with a runny yolk, paired with Jerusalem artichoke and truffle, delights as an evening starter. The pork crackling dumplings also impress with their well-balanced flavors. Even from the cross-section, the perfect doneness of the entrecôte and salt meadow lamb is evident. The beef is served with romaine lettuce and a "Café de Paris" reduction – surely the most exciting combination of the evening. With the lamb, the crunch of the arare is a delight, while the ratatouille and jus are equally excellent.
