The kitchen and its philosophy

Head chef Jürgen Archam directs the main kitchen at Retter Bio-Restaurant in Pöllau with a strict commitment to regional organic cuisine. The Retter family has cultivated these orchards since 1992, growing the rare Pöllauer Hirschbirne pear and quince trees without synthetic inputs. Archam approaches meat procurement with a zero-waste mindset, prioritizing animal welfare and utilizing every cut from trusted local farms. This disciplined sourcing aligns with the property’s Slow Food Austria membership and its broader ecological targets, earning the kitchen a twelve-point rating from Gault & Millau.

Seasonal plates and regional flavors

The menu translates this agricultural background into straightforward presentations that emphasize texture and terroir. Diners commonly order tartare sourced from either mountain sheep beef or locally foraged porcini mushrooms, both finished with precise seasoning. Fried Styrian trout arrives deboned and lightly crisped, accompanied by a sharp potato salad that cuts through the richness. The kitchen also reimagines traditional offal as a plant-based preparation, demonstrating how eco-conscious cooking can modernize heritage recipes while preserving their core flavors.

The restaurant at one of Austria's leading seminar hotels is fully committed to organic ingredients. Not just the restaurant. It wasn't long ago that the Retter joined the Biohotels network. This means that everything prepared in the kitchen is 100 percent organic. Here’s how it appears on the menu: Tartare is available either with Bergschecken beef or Styrian porcini mushrooms – both well seasoned and outstanding. Also highlighting Styrian flavors are the trout (fried and deglazed) and the breaded chicken – skinless, but paired with a truly excellent potato salad. The Retter team experimented with Beuschel until they crafted an exceptionally delicious vegan version of the traditional offal dish. The lamb soup with root vegetables and lamb meat dumplings is equally impressive. Overall, a solid performance. And proof that Slow Food and organic cuisine truly taste fantastic.
