At Guat’z Essen in Stumm, Peter Fankhauser builds his plant-based cuisine around uncompromising seasonal sourcing. He designed the kitchen to treat every ingredient as part of a larger ecological cycle. The We’re Smart Green Guide awarded four radishes to the establishment this year, acknowledging how thoroughly sustainability shapes the menu. Each dish emerges from a system designed to leave the surrounding land intact.

Cultivating intensity through patience

The vegetable garden refuses accelerated growth cycles, allowing crops to develop their own resilience against the regional climate. Plants must navigate competition and weather naturally, which concentrates sugars and deepens earthy notes within the harvest. Fankhauser closes the loop by composting every kitchen scrap to feed raised mound beds, returning nutrients directly to the soil. Recognitions like the Vitalpin Climate Investment Award validate this vegetable-driven cooking model.

The dining space and evening rhythm

Wooden tables sit near large windows that frame the working gardens, keeping the connection between field and plate visible throughout the meal. Guests frequently choose outdoor seating when temperatures allow, dining directly beside the rows that supply the menu. Evening service operates Wednesday through Saturday, creating a steady cadence that supports careful preparation. The plant-focused kitchen here rewards guests who prefer substance over spectacle.

Vegetarian or vegan alone hardly causes a stir these days, but Peter Fankhauser's restaurant certainly does. This Zillertal native combines culinary art with uncompromising sustainability: around 80 percent of his ingredients come from the restaurant's own permaculture garden, which he tends with the same dedication and care that he brings to creating his beautifully presented dishes. The chef comes to the table before each course to present the stars from his garden. With quiet precision and great finesse, Fankhauser stages carrots, celery, or mushrooms in the lead role; his kitchen is therefore not a stage for vanity, but for vegetables, grains, and herbs. Each dish of the nine- to thirteen-course tasting menu is conceived as a finely composed homage to a single plant-based ingredient, enhanced by layered flavors and delicate textures, yet without any gimmickry.
