The story
Café Winok in Schaerbeek unites Nicolas Clarebout's micro-roastery with a specialty brunch menu inside the renovated shell of the former L'Espérance venue. Clarebout, who previously worked for Éthiquable, gave the place its name after his faithful dog, Winok. Exposed brick walls and terrazzo floors ground the design, while huge windows bring natural light to the dining area for early service. This commitment to both coffee craft and welcoming hospitality secured a listing in Le Fooding for 2026.
The brunch menu highlights vegetable-focused preparations, such as a mixed vegetable crepe stuffed with roast broccoli, butternut, and sunchoke. A toasted ham and cheese sandwich topped with a fried egg carries the nickname "the holy trinity," while heartier options offer a traditional country sausage accompanied by gratin dauphinois and romanesco broccoli. Lighter selections include seasonal vegetable tartare, roast potatoes with tomato mayo, and slices of toast spread with parsley pesto and mozzarella.
Operating as a specialty coffee destination, the café roasts Congolese and Indonesian beans daily in-house on a restored Probat P12 from the 1960s. Filter roasts are crafted lightly to maintain fruity terroir nuances, while espresso blends undergo longer development to highlight caramelized chocolate and nutty undertones. The beverage selection expands to tea, wine, and artisanal beers, accompanied by salted dark chocolate cookies. A sunny terrace provides a relaxed setting for drinks and snacks, and the space is fully welcoming to children and dogs.
