The story

CAOS Antwerp: Contemporary Mexican Kitchen and Mezcalería

CAOS Antwerp serves contemporary Mexican cooking along the Scheldt waterfront. Chef Rahman Bucaj directs the kitchen with a focus on seasonal ingredients and modern technique, reimagining traditional flavors for a discerning audience. The menu bridges personal interpretation with deep respect for Mexican culinary heritage, creating a dining experience that feels both distinctive and authentic.

The Chef and the Kitchen

Chef Rahman Bucaj leads the kitchen at CAOS, sourcing local produce to craft dishes that balance innovation with tradition. Founders Mathias De Soir and Stéphanie de Kanter established the venue with a commitment to quality, a vision recognized by a Le Fooding 2026 listing. Reviewers highlighted the restaurant's quiet luxury and the craftsmanship behind plates like the leek and razor clam carpaccio, which arrives with stracciatella and a tomatillo sauce packed with habanero and serrano peppers.

Signature Plates

House-made corn tortillas serve tacos filled with crispy-skinned sea bass, mussel mousseline, and jalapeños. Other menu staples include the lambshoulder taco and the pepper carpaccio, dishes that emphasize texture and bold seasoning. Dessert presents an avocado sorbet blended with smoked yuzu raw cream for a cooling finish. Traditional items such as mole negro chicken and tamales round out the selection, demonstrating a thorough exploration of the Mexican repertoire.

The Space and Spirits

The interior reflects a New York concept store aesthetic, featuring brushed metal, walnut wood, and a polished concrete central altar. A monumental cactus anchors the room while heady incense fills the air. CAOS operates as a mezcalería, hosting Belgium's largest collection of small-batch mezcals. The drink menu focuses on artisanal agave spirits from master mezcaleros, with pairings chosen to complement the complex flavors of the food.

The fact that Caos rhymes with sombreros didn’t cause Mathias De Soir (spotted working the dining room at Mrs. Robinson) and Stéphanie de Kanter (formerly in the marketing world) to roll out the mariachis. Instead, their quiet luxury mezcaleria feels more like an NYC concept store, dressed in brushed metal, walnut wood, heady incense, a monumental cactus and a polished concrete central altar, where no persuasion was needed to worship chef Rahman Bucaj’s plates – which the other night included: leek and razor clam carpaccio with stracciatella, bobbing in a spicy tomatillo sauce (packed with habanero, serrano, ají amarillo chili peppers) seasoned with fermented makrut lime juice… Before tucking into tacos with corn tortillas made in-house, crispy-skinned sea bass, mussel mousseline and jalapeños; then finishing with a huge quenelle of avocado sorbet shacked up with smoked yuzu raw cream. In short, a restaurant mexicana with high-end flavors and expensive taste – a little pricey, yes, but who cares when it tastes this good and the good times keep rolling! · Olive Oyl
