At DIM Dining, the guiding principle is simple: “Eating is a need, enjoying is an art.” This Michelin one-star restaurant on Antwerp’s Vrijdagmarkt bridges two worlds, blending modern and traditional Asian influences with a distinctly Western sensibility. The result is a place where seasonal, meticulously sourced ingredients—many flown in from Japan—are treated with the kind of respect that lets each component speak for itself.
Chef Simon Van Dun leads the kitchen with a philosophy rooted in authenticity and passion. Every visit is built around an Omakase menu—chef’s choice—where the progression of dishes reflects the purity of Japanese cuisine while carrying Van Dun’s own creative signature. Guests can choose from five to ten courses, with options for lunch or dinner. The menus change with the seasons, but the approach remains constant: intense flavors, precise technique, and a deep reverence for the ingredient.
The beverage program at DIM is as thoughtful as the food. Jonas Kellens, a Master Sake Sommelier (awarded in Singapore in 2022), curates pairings that complement the clean, layered flavors of the Omakase. For those who prefer tea, a cha-pairing is available, and the wine list spans 250 references from around the world. Whether you choose a tailored sake arrangement or a classic pairing, the drinks are chosen to enhance—not overpower—the meal.
After nearly ten years, DIM Dining will close its doors on 4 April 2026. The team invites guests to experience their unique blend of Japanese tradition and Antwerp hospitality one last time. It is a farewell to a restaurant that has defined a certain kind of quiet excellence in the city.
