The baker and her dough

Graan operates on a straightforward principle in Antwerp: exceptional pizza begins with patience rather than speed. Floortje developed her signature dough using only organic wheat and spelt flour alongside a live sourdough culture. She lets the mixture ferment for forty-eight hours before shaping or topping it. That extended rest period breaks down complex carbohydrates while building a deeper, nuttier flavor.

Seasonal wood-fired pizza

A newly installed wood oven dominates the kitchen and radiates heat into the adjacent seating area. Fresh produce arrives daily from nearby farms, ensuring every topping reaches peak ripeness. Traditional builds like the Margherita sit alongside inventive plates featuring chicory, marinated red onions, and aged cheddar. The topping selection adjusts automatically as the growing season turns.

The dining room and drinks

Two modest dining spaces connect to a garden courtyard where burlap sacks of raw grain stack against brick walls. Visitors settle onto compact wooden tables and watch dough stretch across lightly floured surfaces. The beverage list highlights small-batch ales brewed through spontaneous fermentation, mirroring the kitchen’s commitment to natural processes. Le Fooding recently recognized the establishment for its transparent methods and consistent execution.

Sacks of flour scattered about, a wood-fired oven in the garden and 20 or so tables spread out across two dining rooms in a small house located behind the zoo. This is where Floortje De Ley works her dough made using sourdough starter and organic wheat and spelt flours, fermented for 48 hours. Fresh out of the oven, her mouthwatering pizzas come topped with seasonal vegetables, fresh herbs, homemade tomato sauce and fior di latte mozzarella made by the local Italian cheesemaker Casa Madaio: classic options like a (vegan) Marinara with tomatoes and garlic or a Margherita pizza; along with more exciting options like the Boerenkool featuring kale, gorgonzola, tomatoes and capers; the Venkel with fennel, burrata, anchovies and black pepper; or, our personal choice, a superb Witloof with chicory, marinated red onions, cheddar, garlic and fior di latte, which would soon be replaced by other creations. And to round out the meal, there’s homemade crème brûlée or affogato.
