The story
Just outside Antwerpen, in the medieval village of Bazel, Hofke van Bazel has built a reputation for inventive, green cuisine that puts pure flavour first. Chef and co-owner Kris De Roy, a Belgian Mastercook, has been at the stove since 1999. Together with his partner Gina Miurin, he runs this fine-dining restaurant with a deeply personal commitment to sustainability – a commitment recognised by both a Michelin star and a Michelin Green Star.
The kitchen’s foundation is the restaurant’s own extensive vegetable and herb garden in the Polders of Kruibeke. Many of the ingredients that appear on the menu are cultivated there, allowing De Roy to cook with the freshest seasonal produce. His style is inventive and technically precise, always in service of the pure taste of each component. The result is a seasonal French cuisine that feels rooted in the landscape.
Guests begin their meal in an atmospheric wine cellar, where a carefully curated selection of classic and New World wines sets the tone. The dining room itself is described as exceptionally atmospheric, offering a setting where nature, culture, and gastronomy meet.
