Behind the understated street facade, founders David Copmans and Lynn Schevelbenbos host a space that leans into clean lines and practical elegance. Executive chef Kirsten Sprokkelenburg directs the kitchen, drawing directly from her own travels across East Asia rather than adhering to rigid regional traditions.

The menu opens with delicate preparations like scallop carpaccio paired with crisp sunchoke chips. Discreet on the outside, stylish on the inside. A little like the very best Japanese wine bars, behind this ordinary-looking corner facade on the N1 13 highway, you’ll find ultra-minimalist, city-slicker decor that combines stainless steel, concrete, wood and neon lights. And who will you find backstage? David Copmans and Lynn Schevelbenbos, and in the kitchen, Kirsten Sprokkelenburg, who is also responsible for Camino, and who gives free rein to her Asian inspirations. Ordered via QR code (sigh!): an almost overly aesthetic scallop carpaccio with sunchoke chips; spicy pork, shrimp and ginger dim sum that really hits the mark; life-giving hand-cut steak tartare surfing on small pieces of toasted bread – even if the chef was a little heavy-handed with the aioli; before a first-rate, cherry-stuffed cream puff with vanilla cream sauce. // Janjan Bon
