Sous-chef Yuh Im Delbecque supports the brigade with preparations that include fermented sauces alongside daily grilling tasks.

A large space decked out with wooden tiles, cushioned banquettes and an open kitchen: welcome to San Ho Correwyn’s kingdom, who started humbly behind the wheel of a food truck in 2015. And these days you’ll find him setting the (restaurant) scene on fire! After the kimbap roll, a sort of Korean sushi, and mandoo (tofu, cabbage and bean sprouts, for the vegetarian version), it’s time to make way for the sizzling barbecue, which is loaded with beef, pork or spicy chicken. How does it work? Grill the meat, stuff it into a lettuce leaf, slather with doenjang (fermented soybean paste) sauce, and devour with kimchi, well-cooked rice and tofu broth. For dessert, sous-chef Yuh Im Delbecque whips up hotteok – big pancakes popular back in Korea. // Juno Madre
