The story
“Because cooking has meaning and a duty towards the earth, because creation must serve the product, because nature has something to tell us about time and patience,” reads the credo at Barge in Brussels. This conviction shapes every plate that leaves the kitchen of chef Grégoire Gillard. Since opening his own restaurant in 2019, Gillard has championed a farm-to-table philosophy that respects producers and the seasons, earning both a Michelin star and a Michelin Green Star in 2023.
Grégoire Gillard is a young Belgian chef who trained at some of Europe’s most exacting addresses: Comme chez Soi – Lionel Rigolet in Brussels, Le Louis XV – Alain Ducasse in Monaco, and four years as second to Sang Hoon Degeimbre at L’air du temps. That last experience, he says, was decisive in shaping his identity. In 2020, Gault&Millau named him Young Chef of the Year. At Barge, he now leads a kitchen team of six, including second Jérémy Warnier and chef de parties Enguerrand Moura, Florian Canté, Benjamin Galante, and Balthazar Kabeya.
Barge’s tasting menus evolve weekly, driven by what is best and most available from a network of small producers. The kitchen does not reveal the exact dishes in advance, but adapts for allergies and offers a vegetarian option on request. Dinner is served in five courses (€110) or six courses (€135), with wine pairings at €55 and €66, or non-alcoholic pairings at €40 and €48. On Fridays and Saturdays, only the six-course menu is offered. A condensed four-course lunch is available on Fridays (€80, with pairings from €32). The sommelier Marie Houx designs the beverage matches.
The team describes Barge as an immersive experience where warm welcome and attentive service create a relaxed atmosphere. The dining room is run by a young, dynamic crew, with Marie Houx as sommelier and chefs de rang Matilda Bourgies, Camille Bernard, and Julia Marx. The result is a restaurant that feels both precise and human – a place where the Michelin star is earned through quiet devotion to the product and the land, not through spectacle.
