In the middle of all the Asian restaurants that populate the Cimdix neighborhood, there’s a small eatery that will really throw you for a loop! All thanks to their flavor-packed bowls of broth filled with fat hui mian noodles, typical of the Henan province in China, made by hand in the open kitchen. After a bowl of vegetables and herbs dressed in a vinegary marinade seasoned with Sichuan pepper to heat things up (we can happily oblige that slight deviation), it was time for the main event: subtle yet sharp broth featuring the aforementioned noodles with sliced beef shank, mushrooms and vinegary cucumbers.
