The story
Since 1979, the Van Ruyskensvelde family has been welcoming guests to JB, a restaurant set in the centre of Brussels, close to the Place Louise and the Avenue de Waterloo. Freddy Van Ruyskensvelde began his career in kitchens at the age of 14, honing his craft at establishments such as the Carlton, Restaurant des Beaux-Arts, Brussels Hotel, Villa Lorraine and the Pimm’s Grill before opening his own restaurant with his brother. Since 1987, Freddy has run the business together with his two sons. In 2000, the restaurant moved to its current address at rue du Grand Cerf 24.
The kitchen respects a tradition of innovating dishes while staying true to Belgian and French seasonal products. The menu reflects this approach: starters include pan-fried duck liver with a Brussels waffle and cherry gastrique, and homemade shrimp croquettes with Nantua sauce. Main courses range from turbot fillet with Belgian endives in cream sauce and hollandaise, to fillet of Irish Angus beef with black pepper cream sauce and home-made fries, or veal sweetbread with morels. Desserts feature a classic tarte tatin with vanilla ice cream and a fondant au chocolat. The restaurant also offers a private banquet room that can accommodate 12 to 24 guests for business or family dinners, with all-inclusive menus available on request.
JB’s consistent quality and value have earned it a Michelin Bib Gourmand award, a mark of good quality, good value cooking. The restaurant’s contemporary interior, with a half-open kitchen, and its welcoming atmosphere make it a natural choice for relaxed lunches and dinners in Brussels.
