The chefs and their method

Located at Petite Rue des Bouchers, Kitsune Burger in Brussels has built a dedicated following through precise vegan street food preparation. Guillaume Le Cavorzin and Pauline Rosselin combined professional kitchen experience with a biologist’s eye for detail to design a fully plant-based menu. Their disciplined approach to vegan cooking earned the spot a place on the 2026 Le Fooding guide. The kitchen avoids heavy substitutes entirely, focusing instead on texture and layered seasoning.

Signature plates and sides

The Korean Fried Mushroom burger features deeply crisped oyster mushroom pieces paired with gochujang sauce and a sharp kimchi slaw inside a Hokkaido brioche bun. Guests often follow that with the Simple Smash burger, which uses an azuki bean falafel patty cooked flat to mimic traditional smash techniques. House-made kimchi rice balls provide a compact starter, while the furikake fries are designed specifically for dipping into the restaurant’s own kewpie mayo blend. Each item relies on straightforward ingredient pairings rather than complex constructions.

The dining room layout

Exposed brick walls and a polished wooden counter define the stripped-back interior at Petite Rue des Bouchers. Customers stand or lean along the service area while watching staff assemble orders. The open layout removes visual barriers between the kitchen and the seating zone. A simple gluten-free mochi brownie completes the visit with a dense, naturally sweet finish.

Where can you find the best vegan street food in town? On the tiny Rue des Bouchers – you can’t make this stuff up! Guillaume Le Cavorzin (ex-Charlotte Café/Cuisine and Café Charbon) and Pauline Rosselin (a former biology teacher) form a cunning duo, as their crafty little Kitsune has already been crowned the “Best vegan fast food of Belgium.” Inside this meat-free den with a stripped-back look (exposed brick walls, a wooden counter, black and white color blocks), the chef fires out Asian fusion burgers. The day we went for lunch, we sunk our teeth into the Korean Fried Mushroom burger, aka mega crispy oyster mushroom nuggets with gochujang sauce, kimchi slaw (a clever mix of kimchi and coleslaw), pickled mustard seeds and iceberg lettuce, all stuffed inside a Hokkaido brioche bun. Also tested and approved: the Simple Smash burger featuring an azuki bean falafel patty smashed just like its meaty alter-ego, plus vegan cheddar, white onion, pickled cucumber, iceberg lettuce, kewpie mayo and ketchup. Gobble up a few kimchi rice balls – which could have been a tad bit spicier, plus some cheeky furikake fries begging to be dunked into the delish house kewpie mayo. Room for more?
