The story
Le Corbier occupies an ancestral cellar in the Sablon district of Brussels, serving as a refined Belgian bistro where Chef Olivier Chanteux centers his cooking around open flames. Owners Arnaud le Grelle and Delphine Roberti de Winghe revived the venue, commissioning decorator Gérald Watelet to shape the interior. Chanteux prepares rustic dishes over grills visible to guests, bridging traditional French techniques with Belgian cooking traditions.
The menu features an Irish ribeye grilled tableside, delivering a smoky char and tender meat served alongside crispy twice-cooked fries. Start with frogs legs sautéed in garlic butter and finished with persillade for a rich, savory counterpoint. Dessert brings a classic French toast presented with vanilla ice cream and salted caramel.
The dining space sits deep within a vaulted cellar, hosting only about forty covers to maintain an intimate atmosphere. Plush velvet upholstery and colorful carpeting contrast with starched tablecloths. This design creates a bourgeois speakeasy feel that earned the Belgian bistro a spot on Le Fooding's list. Two open fireplaces warm the room during cooler months, while a dedicated fumoir extends the evening for those seeking a quieter corner after their meal.
