Mauvais Choix in Brussels operates as a Restaurant Végétarien by Red Mullet, transforming years of pop-up events into a dedicated vegetarian tasting menu. The chefs moved away from familiar flatbreads to concentrate entirely on vegetarian cuisine. Their approach relies on technical precision rather than heavy seasoning. This shift toward meticulous vegetarian cooking recently earned them a spot on the Le Fooding list.

Signature Preparations

The five-course evening menu highlights careful layering of textures and flavors. Guests encounter agnolotti filled with foraged porcini and vin jaune, resting beside glossy egg yolks. Earlier plates often feature smoked beets paired with lacto-fermented foam, sorrel emulsion, and toasted buckwheat. Sweet finishes arrive as marigold-infused madeleines holding zesty lemon curd centers.

The Dining Space

The restaurant occupies the former Le Bain des Dames, leaving traces of its industrial past visible throughout. An imposing counter cuts through the long, narrow room, guiding guests past large windows that frame the original CBR building structure. Evening service spills onto a Majorelle-blue terrace when weather permits. The layout encourages quiet conversation while keeping the kitchen visibly active.

Contrary to what the name might suggest, Mauvais Choix (“bad choice”) was anything but a rash decision. After years of doing the pop-up rounds and private catering gigs, Red Mullet duo has ditched the naan breads to focus on a single vegetarian tasting menu, served in what used to be Le Bain des Dames (an imposing counter stretching through a long, narrow dining room, a windowed remnant of the CBR building and a Majorelle-blue terrace). During our last visit, the lunchtime menu was executed with precision: a tantalizing butternut squash and green curry soup dotted with beetroot rounds and toasted buckwheat; smoked red and yellow beets with lacto-fermented beet foam, sorrel emulsion, pickled mustard seeds and nasturtium leaves – perhaps a touch too overthought; before a plate of sublime agnolotti stuffed with porcini mushrooms and vin jaune , alongside mushrooms foraged by the chef and a glossy egg yolk. Served with our post-lunch coffee, a mini madeleine with a zesty lemon curd center infused with marigold and sea buckthorn leaves, plus a spherical Snickers-style ice cream.
