The story
Môme operates with a spirited approach in the Brussels bistro scene, guided by owner-chefs Raffi Vranckx and Emma Wayet.
Raffi Vranckx joins the project after roles at Bozar, La Villa in the Sky, and Karen Torosyan, while Emma Wayet arrives from Crème and Ciao. They support their output with François Vanes and Arcady Scole working in the kitchen. The duo transformed what was known as Bistro Madame into a space dedicated to bistro cooking served on everyday terms.
Lunch service highlights textural contrasts, featuring smoked mackerel toast accompanied by an escabeche-laced gazpacho made from the last of the summer tomatoes. The kitchen coats chicken croquettes in buckwheat crumbs before serving them with braised cabbage and black garlic mayo. Evening menus introduce raw amberjack layered over smoky beet cream and white gazpacho. Other options include slow-cooked pointed cabbage painted with coriander mayo, a pearl barley risotto enriched with wild mushrooms, and a greengage plum sabayon for dessert.
Le Fooding selected Môme for its 2026 guide, praising the team's capacity to deliver joyful dining with gastronomic precision. The room displays bistro-style checkered tablecloths that provide a comfortable backdrop for the plating. Guests may sit outdoors during favorable conditions. The kitchen also serves a nostalgia-filled pairing of grilled steak and homemade fries, grounding the innovative dishes with familiar comfort food staples.
Recognition
