The story
Laura Agneessens founded Slow, a brunch destination in Namur, after honing her skills at La Table du Boucher and Bistro Bisou. Her vision centers on building a neighborhood hub where people can pause for coffee or share a hearty lunch before settling in for an evening drink. She launched the project alongside her partner while raising their son, treating the café as a shared community asset rather than a solitary venture. The kitchen serves straightforward fare like homemade kefta and salmon ceviche, complemented by curated selections such as Kaas cheeses.
Breakfast covers both sweet and savory grounds, offering homemade granola and chocolate spread on toast alongside soft-boiled eggs with ham and Morbier cheese served with herb butter baguette soldiers. Daily lunch specials rotate quickly, highlighting fluffy smashed potatoes dressed in chimichurri or tartines piled high with whipped feta. Guests can round out the meal with matcha brownies or a generous giant cookie from the display case. Every dish arrives fresh, reflecting a menu built around quality ingredients and careful preparation.
