The story
In the quiet village of Maarke-Kerkem, part of the Maarkedal municipality near Oudenaarde, Bleuet offers a kitchen built on calm and respect for the product. Chef Pieter-Jan leads a team that cooks with attention—slow where slow is needed, precise where precision counts.
The kitchen is grounded in the seasons, drawing from what nature and the region have to offer. Vegetables come from the pick-your-own garden, treasures from the sea, delicacies from the land—each ingredient treated with care and allowed to be what it is. Every preparation is house-made, balanced, and without noise. It is a European, seasonal cuisine where flavour arises from simplicity, and craft sets the rhythm.
This approach has earned Bleuet a place in the Michelin guide as Recommended, a recognition that aligns naturally with the team's philosophy of cooking without haste and letting time do its work.
Chef Pieter-Jan’s desire to taste everything—flavours, textures, combinations—gave rise to the Chef's Table. This format offers a selection of the moment’s finest ingredients in a 4, 5, 6, or 7-course menu (4 courses available on weekdays). Guests are invited to share their allergies or preferences, and the journey begins.
For those who prefer to choose, the à la carte menu changes with the market. Starters might include ravioli of oxtail with a sauce of brown Ename beer and pickled shallot, or a hamachi crudo with a soy-wasabi-ginger infusion. Mains range from Skrei cod with a mussel tartare and potato espuma to lamb prepared two ways—crown and pulled lamb with a smous and potato rosette. Desserts include a classic Dame Blanche with raw milk ice cream and Callebaut chocolate sauce, or a tartelette of fig and Armagnac on a sablé breton base.
A lunch formula, Midi Bleuet, offers a three-course menu on weekdays, featuring dishes such as miso-glazed savoy cabbage with a wild garlic hollandaise, and lamb neck with pomme château.
Bleuet is open for lunch between 12:00 and 13:30 on Monday, Tuesday, Friday, and Sunday, and for dinner from 18:30 to 21:30 on Monday, Tuesday, Friday, and Saturday. The restaurant is closed on Wednesdays and Thursdays. Outdoor seating is available, and there is parking on site.
