The story
Robuust is a restaurant where a sense of welcome comes first. Opened on 8 May 2017 in a renovated house near the Flanders Field American Cemetery in Waregem, it is run by three sisters. Caren and Charlotte are the hostesses, while Isabelle leads the kitchen with her team, crafting a daily lunch experience built on flavour.
The setting is light-filled and warm, with a garden and ample parking. The interior feels both spacious and intimate, the kind of place where you can settle in for a long afternoon. The restaurant has earned a Michelin Recommended award, a recognition that speaks to the consistency and care in the kitchen.
The menu at Robuust is grounded in modern French cuisine, with a strong sense of generosity. Lunch offers a business formule – recently a Vitello Tonnato followed by a Millefeuille Caesar with hoevekip and truffle – for 38 euro per person. The à la carte is equally inviting: starters include a homemade garnaalkroket with fried parsley and lemon, or a carpaccio of Dry Aged Rubia beef. Mains range from wild sea bass meunière to a vol-au-vent with hoevekip, shi-take, and the option to add calf sweetbread. There is a Côte à l’os for two, steak tartare with homemade pickles, and a Caesar salad with grilled chicken.
In June and July, the restaurant shifts into a more relaxed mode. Wednesday evenings they open as Gastrobar Robuust from 17:00, no reservation needed, serving aperitifs and tapas – think gelakt buikspek with sweet potato and green curry, bao buns with crispy chicken, or yakitori chicken. Thursday evenings they offer a full dinner from 18:30, by reservation.
Robuust is a family affair in the best sense – personal, unpretentious, and driven by a clear love for what they do.
