Seasonal Menus, Seriously Composed

Guests choose four, five, six, or seven courses from a seasonal menu that demonstrates real kitchen discipline. A spring menu, for instance, moves through trout with cucumber and cream, white asparagus with Rømø shrimp and wild garlic, and pike-perch with fumé and tomato, before arriving at new potatoes with caviar and tapioca, summer roe deer with green asparagus, peas and carrots, a selection of cheeses with quince and crispbread, and finally strawberries with white chocolate and woodruff. It is cooking that respects both the season and the diner.

White Guide, which awarded Vallø Slotskro its Masters level recognition, described the kitchen in detail: a ballotine of scallop surrounded by monkfish cheek and fennel, finished tableside with a creamy lobster bisque; a more modern plate of lemon sole with roasted kale, horseradish and a green cabbage sauce that brings the dish into sharp balance; perfectly pink deboned quail with soufflé stuffing, pickled carrots and wild garlic emulsion. The free-range pork course draws sweetness from a butter-rich beetroot cream, its intensity countered by pickled cherries and radicchio. Cheese arrives as five of Arla Unika's finest, served with quince jam and butter-fried brioche.

The wine programme is, by any measure, exceptional — an extensive, well-curated list with a particular affection for great French classics, supplemented by a glass-by-glass pairing option for each course. White Guide singled out an elegant Slovenian pinot noir alongside the quail, and an unconventional dry Sauvignon Blanc from Rheinhessen matched to the cheese course — a pairing that, against expectations, worked beautifully. For nearly a decade, host couple Tina and Palle Møller have run the inn at the historic Vallø Castle south of Køge, but there are no signs of fatigue in the charming yellow buildings. Inside, you'll find beautiful wooden floors, designer chairs and lamps, tablecloths on the tables, and one wall lined with wine bottles. You can select four, five, or all six courses from the seasonal menu, and if you're not in the mood to pore over the highly extensive and meticulously curated wine list, which leans toward grand French classics, a wine pairing by the glass is available for each course. The meal opens with three excellent starters – a small bowl of pan-fried Danish squid, a gougère, and a crustade topped with spider crab roe and wild garlic – all three delightfully satisfying. The first proper course features a scallop ballotine encircled by flavorful pieces of sea squirt and fennel cubes, tableside-poured with a creamy lobster bisque – pure classic flavor. The evening's second seafood dish takes a more modern approach, presenting juicy red mullet alongside fried kale, horseradish, and a vibrant green cabbage sauce with a bright acidity that brings the dish into perfect harmony. This is followed by perfectly roasted, boneless quail with a light soufflé filling, pickled slightly tart carrots, crispy carrot chips, and a savory wild garlic emulsion. Paired with this is an elegant, spiced Pinot Noir from Gönc in Slovenia, which complements the dish beautifully. The free-range pork, tender and deeply flavored, gains sweetness and richness from a luscious beetroot cream, whose intensity is cut through by tangy pickled cherries and crisp, slightly bitter radicchio. The cheese course showcases five exceptional Arla Unika cheeses served with quince jam and butter-toasted brioche. This is matched with a glass of crisp Sauvignon Blanc from Uwe Spies in Rheinhessen, offering abundant pear and exotic fruit aromas. Pairing dry whites with cheese isn't standard practice, but here the selected wine excels thanks to its full body and fruity character. Following the dessert of apple ice cream with almonds, caramel, pickled apples, and rum foam, we conclude with espresso and three exquisite petit fours. The venue also boasts a refined cigar selection, and as noted, an exceptionally impressive wine list, making it easy to see why guests linger and opt for overnight stays. Gourmet packages are offered at a remarkably affordable rate, which contributed to the inn winning the White Guide's "Taste for Your Money" award a few years back. Few establishments match Vallø Castle Inn for its stunning surroundings, welcoming service, precision-driven high-end kitchen, and extraordinary wine list at such a reasonable price.
