A Restaurant Built on a Feeling

The Danish word “lyst” resists direct translation. It carries the weight of desire, aspiration, and the simple impulse to do something because you feel like it. At LYST, that untranslatable concept becomes a concrete, sensory experience—one that has earned a Michelin star and a place among Scandinavia’s most ambitious restaurant projects.

Where Gastronomy Meets Art

LYST occupies the ground floor of Fjordenhus, a twenty-eight-metre-high building designed by artist Olafur Eliasson and architect Sebastian Behmann. Rising directly from the waters of Vejle Fjord and connected to the city by a footbridge, the building is a sculptural artwork of intersecting brick cylinders and sweeping arched windows. Inside, every element of the evening—lighting, custom-composed soundscape, service, and the view of the fjord—is orchestrated to complement the meal without micromanaging it. The result is an immersive, symphonic event that merges architecture, gastronomy, and human presence.

A Menu Shaped by the Elements

Each day, the kitchen creates a unique menu of around twenty locally sourced servings, guided by the four elements of earth, air, fire, and water. The seafood is drawn from the fjord; greens, herbs, and mushrooms are foraged from nearby fields and forests; game and produce come from local farms. Chef Daniel McBurnie and his team source everything possible within a 100-mile radius, using every ingredient to its fullest. The menu changes with the weather, season, and cultivation, so no two visits are identical. The four-hour experience is built around the idea that when you eat at LYST, the fjord flows through you.

Recognition and Roots

LYST opened in November 2019 in the middle of a pandemic, yet quickly gained international recognition. By the end of 2020, critics called it one of the most ambitious restaurant projects in Scandinavia. That momentum has continued, culminating in a Michelin star that affirms the kitchen’s precision, creativity, and commitment to local gastronomy. The restaurant was founded by the late Morten Kirk Johansen and is now owned by his two children, who carry forward his vision of a magical, inclusive, and sustainable dining experience.

The wine program, housed in a cellar below sea level, offers a carefully curated list by the bottle or glass. A team of sommeliers guides guests through pairings that range from classic to the “legendary experience.” The dining room is open Thursday through Saturday, with afternoon and evening seatings.

As the wind whistles through the passages of Olafur Eliasson's grand artwork, Fjordenhus, where nothing measures a square dead corner, but instead consists of organic arches and ellipses, we are shown around with a glass of nettle juice with mint and basil to whet the appetite. To the tune of "Op al den ting som Gud har gjort," we enter the first floor and are seated at the circular massive glass table with a serving station in the middle, and are poured a classic lovely glass of 2020 Jolivette champagne from Nicolas Maillart made from 100% pinot noir. The wine cooler with the three different champagnes we can choose from is nothing less than a giant ice block, in which three cylinder holes for the bottles have been carved.
