Le Sin sits within the striking, wave-shaped Cité de l’Océan in Biarritz, designed by architect Steven Holl. The dining room and terrace face the Atlantic and the Château d’Ilbarritz, offering a view that is as much a part of the experience as the food. Chef Michel Cassou-Debat

Michel Cassou-Debat comes from the Béarn region, the son of a Meilleur Ouvrier de France in saddlery. He trained in some of France’s most respected kitchens – the Crillon, Grand Véfour, Le Petit Nice, and Troisgros – before opening his first restaurant, Le Sissinou, in 2001. At Le Sin, his cooking is built on a simple principle: “le goût, le goût et toujours le goût” – taste, taste, and always taste. The menu changes every two months, following the seasons and sourcing ingredients from nearby producers.

The cuisine is modern, precise, and rooted in the Basque Country’s larder. One standout, mentioned by the restaurant itself, is the pigeon fermier with a jus tranché à l’ail – a dish that exemplifies the chef’s direct, flavour-first approach. The menu is concise, letting the quality of the produce speak. Whether you sit inside or on the terrace, the food is matched by the rhythm of the ocean beyond.
