The story

La Bonne Mère in Cassis serves award-winning Neapolitan pizza

The Kitchen and Its Origins

La Bonne Mère in Cassis anchors a distinctly Italian kitchen where pizzaiolo Jérémy Piazza and his partner Mahéva Angelmann guide every service. They restored a former trattoria tucked down a quiet alleyway to bring Neapolitan baking traditions to the Mediterranean coast. This meticulous approach recently earned a listing in Le Fooding, which noted the pair’s dedication to proper sourcing. Every base starts with organic whole-wheat flour and a natural levain imported directly from Italy.

Signature Bakes and Toppings

The menu centers on wood-fired rounds that balance simplicity with precise ingredient selection. Their namesake pie layers San Marzano tomato sauce over fresh buffalo mozzarella, basil leaves, and a steady drizzle of olive oil. Another standout combines marinated anchovies with a vibrant pistou spread for a briny finish. These combinations reflect a disciplined approach to Italian cooking that prioritizes texture and flavor clarity over heavy seasoning.

Terrace Dining and Sweet Finishes

Guests settle onto a sloping outdoor terrace framed by weathered terracotta walls and potted olive trees. The relaxed setting invites slow meals before the evening service begins. A rich rum baba provides a boozy conclusion, featuring a tender brioche sponge soaked to perfection. Lighter options like coconut or lemon frozen treats arrive from a discreet Italian gelato maker, rounding out the meal without heaviness.

We’ve found the best pizza in Marseille… in Cassis! A delicious outrage (are we exaggerating?) masterminded by familiar faces: pizzaiolo Jérémy Piazza, aka Jéjé, and his partner Mahéva Angelmann, who shook up the Phocaean city a decade ago from their base at the foot of Notre-Dame-de-la-Garde. Name-checked in Le Fooding as far back as 2016, the duo are back in the spotlight inside what was once La Goccia d’Olio, a former trattoria tucked down an alley in the historic center. And they still don’t mess around when sourcing: organic whole-wheat flour, natural levain prodotto in Italia and top-notch toppings for pizzas with a distinctly Neapolitan soul. The other evening, perched on the sloping little terrace framed by potted olive trees and terracotta walls, we devoured: a Bonne Mère pizza with a San Marzano tomato sauce, buffalo mozzarella, basil and olive oil, alongside a disarmingly simple, knockout version topped with marinated anchovies and pistou. To finish, a rum baba to die for, all boozy brioche sponge and bliss, plus dangerously moreish iced desserts (coconut, lemon, orange) from a mysterious Italian gelato maker – our lips are sealed! · Madeleine Proust
