Terra Chartres – Michelin-Recommended Italian Dining in Chartres

A passion for Italian gastronomy

Since 2017, Terra has brought the flavours of Italy to Chartres. Chef Giuseppe Paglia, born in the Puglia region, approaches cooking as an artist composes a canvas. Every dish balances creativity, texture, and flavour, aiming for a refined gustatory experience that lingers. His partner Lisa, originally from South Africa and with fifteen years in London restaurants, complements him with her pastry skills and meticulous plating. Together they created Terra as a celebration of Italian cuisine, from antipasti to desserts.

The Michelin touch

Terra’s commitment to quality and authenticity earned it a place in the Michelin guide. Recommended in 2026, the restaurant is praised for its seasonal, house-made dishes. Everything — from the charcuterie and pastas to the desserts — is prepared in-house using local produce and the best Italian imports. The result is a menu that changes with the seasons while staying true to its Italian roots.

On the plate

Among the starters, the beef tartare with mustard and truffle emulsion and the violet aubergine with basil pesto and fermented garlic stand out. Pasta lovers will find tonnarelli with truffle and aged cheese sauce, paccheri alla Norma, and a lasagnetta with ricotta, spinach, and Parmesan emulsion. For main courses, braised beef cheek in red wine with vegetables, and fresh fish from the market are typical. Vegetarians are well looked after with the Orto d'Inverno (vegan) and a daily selection of sun-ripened vegetables, prepared in various ways.

Desserts include a classic millefoglie with mascarpone and vanilla, chocolate rocher with praline ice cream, and a pistachio panna cotta with red fruits (also vegan). The wine list and cocktails are thoughtfully curated to match the menu.

Atmosphere and setting

Terra offers a spacious, elegantly decorated dining room as well as a large, sunny terrace. In fine weather, the terrace transports guests to Italy, with a comfortable, convivial ambiance. Private parking makes access easy. The restaurant also operates an Italian grocery for those who want to take home parmesan, prosciutto, balsamic vinegar, and other specialties.
