The story
Le Muratore occupies a place dedicated to gourmandise since the 19th century, in the historic centre of Évian-les-Bains. The dining room retains its Belle Époque style, while a shaded terrace beneath a century-old lime tree invites relaxed meals in warm weather.
The kitchen focuses on authentic Savoyard cuisine, highlighting local produce and fish from Lake Léman. Smoked trout from Savoie, perch fillets, and omble chevalier (Arctic char) from the Murgat fishery feature regularly. Meat dishes include Charolais beef, mountain pork confit, and hearty Lyonnais classics like tête de veau and andouillette. Vegetarian options are also available, such as grilled tofu with seasonal vegetables and a generous plate of ravioles du Dauphiné.
Le Muratore’s commitment to good quality, good value cooking earned it a Michelin Bib Gourmand in the 2026 guide. The menu changes with the seasons, and fresh fish arrivals are listed on a daily slate. Desserts come from the pastry workshop of Loïc Laude, and the wine list offers owner-producer wines by the glass.
