The story
In the centre of Millau, in the Sud-Aveyron, Chloé and Rémi have opened the restaurant of their dreams. After two and a half years travelling the globe, observing and experimenting with new ways of thinking and cooking, they returned to France with a clear vision: a restaurant that is both gastronomic and green.
Maison Seed is the result. The duo describe their approach as a "cuisine passionnelle, primitive & sincère" — a passionate, primitive and sincere style of cooking. Everything is made in-house, from scratch, with a deep respect for the product. Their values are rooted in determination, creativity, innovation, and a sense of responsibility toward the environment.
The restaurant’s concept earned it a place in the Michelin Guide, which now recommends Maison Seed for its modern cuisine. It is also recognised by the Collège Culinaire de France and the Guide Boullenger.
The atmosphere is one of genuine welcome. Chloé and Rémi have built a space that feels both contemporary and grounded, where the focus is on letting the ingredients speak. The menu changes with the seasons, driven by what is fresh and local. While the specific dishes change regularly, the philosophy remains constant: a cuisine that is inspired and inspiring, honest and full of flavour.
For those looking to share the experience, Maison Seed also offers gift vouchers and private dining options for events, from family meals to professional gatherings. The restaurant is wheelchair accessible and air-conditioned.
Maison Seed is open Wednesday to Saturday evenings, and Saturday lunchtimes. It is a place where a couple’s global journey has become a local destination — one plate at a time.
