La Merenda, Nice: A Bib Gourmand Bistro of Honest Niçoise Cooking

A Return to the Essentials

La Merenda has anchored the narrow streets of Vieux Nice for over sixty years, a short walk from the flower market at Cours Saleya. Chef Dominique Le Stanc, who once held two Michelin stars at the Negresco, took over this tiny bistro with a deliberate purpose: to strip away the superfluous and focus on the essence of cooking. The result is a convivial room where tables are close, conversation flows naturally, and every plate speaks directly of the Provencal terroir.

Market Cooking, Niçoise Style

The menu changes daily, dictated by the market and the seasons. Le Stanc works with local producers to source the freshest ingredients, then prepares them with respect for tradition. Classics like pissaladière, courgette flower fritters, stuffed sardines, pistou pasta, stockfish, slow-cooked daube, and Swiss chard tart appear regularly. Each dish is a direct expression of Niçoise—and thus Provencal—cooking: honest, generous, and without compromise.

A Bib Gourmand with Conviction

There’s no point in calling since La Merenda doesn’t have a telephone – it’s best to just stop by the day before to secure a reservation at this legendary, unpretentious restaurant: timeworn tomette tile floors, a ceiling shrouded in curtains, old mustard jars for glasses… For ages now, Dominique Le Stanc (the former chef at the Negresco) has been brilliantly exhibiting all the classics of Alpes-Maritimes cuisine, served on paper tablecloths. The other night, as with so many others: a zucchini blossom beignet that started things off right; stunning tagliatelle turned green with pistou , the local version of pesto; an ultra-tender Provencal stew with a mountain of panisse fritters; small, stuffed veggies; before the iconic dessert, a sweet chard pie with pine nuts and raisins.
