On the main square of Vaugines, a tiny village in the Luberon between Lourmarin and Cucuron, chef Giovanni Facchinetti runs Insitio. The name comes from the Latin for “graft” – a fitting image for a team that arrived from elsewhere and put down roots in Provence. Their modern cuisine is shaped by the seasons and the local terroir, but also by their travels and traditions.

The dining room is designed to feel like a place apart. As the restaurant puts it, they have created “an atmosphere unique enough for guests to find themselves here and elsewhere at the same time.” Attention to detail and a search for pure flavour define the experience, with an emphasis on sharing.

The weekly menu changes regularly. At lunch, a lighter formula is available: starter and main, or main and dessert, for 38€. The full tasting menu runs through starter, fish, meat, cheese and dessert. On Thursday lunch, when the village market fills the square, there is a special “Saison” menu at 26€. A children’s menu is also offered.

Insitio has been recognised by the Michelin guide, a recommendation that reflects the precision and care in the kitchen. The restaurant is open Tuesday to Saturday for lunch and dinner, and closed Sunday and Monday.
