The story
Originally opened in 2016 as a Japanese bakery and café, Co- has grown into an insider spot for Japanese dishes in Berlin’s Charlottenburg district. Run by the Japanese diaspora in the city, it offers a variety of savory and sweet bites beyond the usual ramen and sushi. Its quiet, precise cooking earned a Michelin star, a recognition that speaks to the kitchen’s commitment to depth over flash.
At the heart of Co- is chef Toshihide Kameda. Called to the craft at 18, he trained in Kyoto in the traditions of kaiseki ryori and chakaiseki, the refined cuisine served at tea ceremonies. Since 1996, he has built a career as a master of kaiseki in Japan, as well as a chef in Macau and China. At Co-, he brings that wealth of experience to every plate.
The menu features two standout specialties. The Bento Box follows the Japanese principle of ichiju-sansai — a balanced composition of healthy ingredients — combining Japanese and regional elements to create a bento with deep umami flavor. Guests can choose from vegan, fish, or meat variations.
The other signature is Oshi Sushi, a pressed sushi with origins in Kyoto. Traditionally made with preserved fish (Kyoto being far from the coast), Co- offers modern interpretations, including roast beef and vegan versions. The rice and filling are pressed into a mold for a wonderful texture, then elaborately topped.
Beyond the dining room, Co- offers its bento boxes, oshi sushi, and other Japanese bites for takeaway and catering, with the chef able to prepare for up to 100 people upon request. The restaurant also features an interesting wine list to complement the food.
