The story
Hotel Ambassador in Brig began as a modest pension in 1945 before evolving into the French-inspired brasserie cooking that draws diners today. Alfred and Anna Welschen founded the establishment, with Anna handling the kitchen while her husband managed guest relations. Decades later, their grandson Stefan Welschen and his partner Maria Grazia Vincenzi steer the dining room with the same hands-on approach. Stefan launched the Brasserie des Cheminots to bring authentic French techniques to the region, prioritizing fresh ingredients and straightforward preparation over theatrical presentation.
The kitchen follows a monthly rotation that aligns each plate with regional harvests and seasonal availability. Recent Gault Millau reviews highlighted the refined asparagus velouté and the tender Zürcher Geschnetzelte paired with a crisp rösti. Summer tables often share the apéritif platter featuring roast beef and vitello tonnato alongside grilled poussin when the weather turns warm.
The dining space retains the nostalgic elegance of its original form as a railway workers canteen near Brig station. Wooden accents and an open layout create a relaxed setting where the classic French cuisine remains the clear focus. A curated cellar spans Valais, Ticino, France, Italy, and Iberia, offering several glasses to sample before committing to a bottle.
