In Berlin-Mitte, on Chausseestraße, Rutz stands as a singular destination for modern cuisine. Since 2020, it has held three Michelin stars, a recognition that speaks to the precision and clarity of the kitchen led by Chef Marco Müller. The guide describes the food as a "prägnante Küche, die ganz eigene Wege geht" – a concise cuisine that follows its own path.

The restaurant began in 2001 as a wine bar, founded by the late Lars Rutz and the couple Anja and Carsten Schmidt. It has since evolved, remaining a family-run house without outside investors. Today, Küchendirektor Marco Müller and Küchenchef Dennis Quetsch drive the kitchen's continuous development.

The atmosphere is shaped by the architecture of Prof. Gesine Weinmiller, who wove the kitchen, storeroom, and dining room into a single, unified space. "Sie sind nicht mehr voneinander getrennte Welten," she says, "sondern Küche, Bevorratung und Raum der Gäste sind eins." The interiors feature rough-hewn natural stone walls from Brannenburger Nagelfluh, creating a tactile, warm environment. A standing table opposite the kitchen pass allows guests to observe the team in action, fostering a direct dialogue between cook and diner.

The Menu: Nature & Aromas

Marco Müller's approach is built on contrasts and clear flavors, with a focus on regionality, sustainability, and craftsmanship. The "Inspirationsmenü Natur & Aromen" is the core expression of this philosophy. Each dish begins with a single thought, a connection to nature and season. A recent menu included dishes like Quellforelle with kohlrabi and charcoal, Kapuzinerkresse with rabbit and winter radish, and Challans-Ente with roasted koji and pear. For those who prefer a plant-based path, an "Edgy Veggie" version of the menu is available, featuring dishes like Sonnenblumentofu and Sellerie with sauerkraut and elderflower.

The wine program is equally distinctive. The sommelier team, led by Sebastian Höpfner (named Sommelier des Jahres by Gusto Deutschland in 2026), creates pairings that break with dogma, connecting each glass to the dish through origin, craftsmanship, and philosophy. An alcohol-free pairing is also offered.

25 Years of Inspiration

In 2026, Rutz celebrates its 25th anniversary. From January 12 to April 3, the team presents "Rutz Remastered: 25 Years of Inspirations," a menu of 11 courses that revisits defining dishes from the restaurant's history. Each course is a "track" on an album, representing an idea, a moment, or a development in taste and technique. This is not nostalgia, but a remastered experience, served at the level of the three Michelin stars that have defined the restaurant since 2020.
