The story
Since 2013, Simon and Sarah Kaiser have been crafting dishes that celebrate the products of Upper Swabia. The guiding philosophy is slow food: cooking with respect for high-quality ingredients, sourced from the rich region around Mittelbiberach. The result is a menu that the team describes as "regional.fein" – refined yet rooted.
Simon Kaiser trained under Michelin-starred chefs Rolf Straubinger, Johannes King, and Josef Steffner, among others. After years in fine-dining kitchens across Germany, he and his wife Sarah – a trained art therapist who brings warmth and a keen eye for atmosphere to the dining room – opened their own "Genusswerkstatt" (pleasure workshop) in the small town of Mittelbiberach. Together, they have created a space where guests feel at home while enjoying carefully composed food.
Esszimmer’s menu is built around small, shareable dishes – "Köstlichkeiten im Tapas Style" – though the kitchen is quick to note these are not Spanish. The portions are small, designed for sharing so that everyone at the table can taste a wide variety. The team recommends three to four bowls per person. For those who want something more substantial, there are also larger portions of fish, meat, or vegetarian options, with sides and toppings chosen to taste. Desserts, called "Süssis", are kept intentionally mini – because something sweet always fits.
Throughout the year, Esszimmer hosts themed events that allow the chefs to explore beyond their seasonal, regional base. In early 2026, the restaurant runs South America Weeks, offering authentic dishes from Argentina to Brazil, served in the same sharing style. A Japan meets Esszimmer evening pairs Japanese food with wines from a guest winery. For Easter, a special menu features spring vegetables, lamb, and homemade ravioli. Groups can also book a custom multi-course menu in advance.
In 2026, Esszimmer was awarded a Bib Gourmand by Michelin, a distinction that honours good quality cooking at a reasonable price. It is a fitting recognition for a restaurant that puts flavour, regionality, and conviviality first – without pretence.
