Since 2013, maiBeck FÜR DICH in Cologne has lived the idea of a bistro for every day, offering exceptionally good cooking. The team draws from the full scope of the seasons, the weather, and the culinary possibilities the region around Cologne provides. Close contact with farmers and personal relationships with producers give guests the chance to find the extraordinary in the simple. This philosophy is framed by a warm, experienced service team and sommelier Sascha Bauer, whose precise wine selection complements the kitchen’s vision. The restaurant’s commitment to quality and regionality has earned it a Michelin recommendation.

From Land to Table

The kitchen at maiBeck is rooted in simple, high-quality ingredients. Direct, friendly relationships with local growers allow the team to source exceptional regional produce. Dishes change creatively based on daily availability and quality. Recent offerings have included slow-braised beef shank with spinach and fig-leaf squash, and pan-seared IJsselmeer pike-perch with pointed cabbage and lentils. The menu also features hand-cut tartar of Prüm beef and a selection of artisanal cheeses from Käserei Glück. This modern cuisine, grounded in country cooking, brings the restaurant’s core idea to life.

A Project of Discovery

Beyond the daily menu, the maiBeck team has launched Herbarium, a collaboration with food photographer Jennifer Braun and author Johannes J. Arens. For nearly a year, they explored parks and green corners of Cologne in search of edible plants. The result is a limited-edition box containing recipe cards, botanical prints, an essay on berry picking, and a handcrafted herbarium sheet. As Jan C. Maier of maiBeck explains, “The maximum enjoyment remains the top principle – the plants must not only be edible, they must represent a culinary enrichment.”

Zucchini with asparagus kimchi and almond mayonnaise delivers a vibrant freshness, while the sea bream with tomato and peach charms with Mediterranean lightness. Tender veal tongue served warm meets earthy beets, chanterelles, and pickled cucumber – elegantly finished with crème fraîche and chives. Plums form a gentle, fruity harmony with ricotta and pumpkin. Wine Expertly curated, fairly priced European wine list featuring over 200 selections. A dozen wines available by the glass.
