At Jin in Munich, the question “What is Chinese cuisine?” is answered with a personal twist. Chef Hao Jin, who hails from the coastal Zhejiang province south of Shanghai, doesn’t serve a generic version of Chinese food. Instead, he offers what he calls “Jin-esisch” – a cuisine that is 100% his own. His cooking draws on the light, natural flavors of his homeland, where seafood and reduced spice are preferred, and is refined by a deep respect for Japanese techniques, especially when it comes to ingredient quality and freshness. After more than twenty years in Munich, Jin also weaves in seasonal local produce like asparagus, wild garlic, and mushrooms.

Signature Dishes and a Degustation Journey

The menu at Jin is a testament to this philosophy. Starters include a Tatar of Blue Fin Tuna, fired up with chili and topped with flying fish roe, or a Carpaccio of the same fish with a yuzu-fig-ginger dressing. The Dim Sum are hand-formed, one by one – the filling of Iberico pork neck in the potstickers is a standout. A perennial favorite among regulars is the “Praline vom Schweinebauch” – braised pork belly in a ginger-soy-honey broth. Concept A restaurant like a short trip to China. Menu and à la carte. Culinary Style Chef Hao Jin's home region south of Shanghai inspires many dishes: cuttlefish, sliced into fine strips and gently poached in hot broth, flavored with sesame oil, leek, and paprika. Sea bass frames form the base for an intense, stomach-warming soup of white shrimp and cod, with white asparagus providing seasonal accents. A highlight is the Breton lobster, steamed, picked, and flavored with ginger, rice wine, and hot leek oil. And for those still not full, there's Jin's legendary noodle soup with homemade ramen noodles and beef fillet, marinated in soy sauce, rice wine, and ginger before being flash-seared in a screaming-hot wok for just seconds. Wine A committed wine list tailored to the culinary style, featuring around 160 selections, with a focus on Riesling and Burgundy.
