The story
At the corner of Amalienstraße and Türkenstraße in Munich, Sparkling Bistro is the kind of place that doesn’t need to shout. Chef and owner Jürgen Wolfsgruber, born and raised in the Salzkammergut region of Austria, brings a kitchen shaped by the clarity and wildness of the Alps. He opened the bistro in 2015 with a simple aim: a space where precision and personality coexist, and where good craftsmanship, conversation, and enjoyment are equals.
Wolfsgruber’s philosophy is straightforward — uncompromising quality, honest ingredients, alpine roots, and French technique, served with lightness. The Michelin star arrived in 2020, a welcome acknowledgment but never the goal. What matters more to him is what a dish evokes: a smile, a memory, a conversation.
The menu changes with the market. At lunch, a four-course Marktmenü is offered, with classic upgrades available. In the evening, the five-course Gustostückerl takes center stage. Everything is handmade, and the kitchen uses only ingredients whose origins are known — no endangered species, no shortcuts. This is a modern cuisine that tells stories of origin and childhood, of onions that taste like caramel, delivered with a wink.
The atmosphere matches the food: warm, unpretentious, and personal. Wolfsgruber is a chef who prefers sneakers to white jackets, who wants to know his guests. The sparkle of the bistro isn’t just on the plate — it’s in the room, in the moment, in the way people come together.
