THE CLOUD by Käfer in Munich operates as a hub for modern cuisine, built entirely around the concept of Culinary Nomadism. Chef de Cuisine Jens Madsen guides this approach by collecting ingredients, techniques, and personal memories from his travels rather than following established national traditions. The kitchen translates these observations into a flexible framework that shifts with each new season. This method earned the restaurant two MICHELIN stars upon its first evaluation and the Opening of the Year 2026 distinction.
The current menu draws directly from the Amazon basin, focusing on fermentation, wood smoke, and sharp tropical acidity. Guests navigate an eight-course progression where regional German produce takes on unfamiliar roles alongside imported botanicals. This approach to fine dining relies on precise technique rather than fixed recipes. Pairings combine selected wines with house-crafted cocktails to bridge fermented notes and bright citrus elements.
Service begins outside the main dining room, moving guests through a series of connected spaces designed by BMW Designworks. Each transition introduces specific lighting cues, acoustic textures, and material shifts that mirror the seasonal narrative. The forty-two seat layout maintains an intimate scale, allowing the kitchen and beverage director Luigi Pecchia to coordinate every detail.
