This is country cooking rooted in the Swabian Alb, a UNESCO Biosphere Reserve, and guided by a deep respect for nature. Simon Tress, the chef and one of the four Tressbrüder brothers, leads the kitchen, bringing together the values passed down from his grandfather and father with a modern, sustainable vision.
