The story
The Bauernstuben is the heart of the Ochsen Post, an inn that has stood in Tiefenbronn since 1694. What began as a way station for traders on the route between Cannstatt and Speyer is now a family-run restaurant, helmed by Peter Jost and his family. The building itself—rebuilt in 1791 and preserved to this day—is a testament to the region’s hospitality, with massive stone walls and a warm, inviting atmosphere that feels both historic and thoroughly lived in.
The kitchen here is rooted in badisch-schwäbische landküche, a style of hearty, ingredient-driven country cooking that draws on the fields and forests of Baden-Württemberg. The Josts make their own stocks, roast bones for deep-flavored broths, and prepare Spätzle by hand. Sauces are simmered fresh, not from a base. The menu changes with the seasons, but staples include Maultaschen (Swabian dumplings) with onion butter, Linsen mit Saitenwürstle, and the "Essenz vom Ochsen" – a beef tea slow-cooked under vacuum for twelve hours, then reduced for eight more. A legendary fish soup, made from a family recipe, has been a regular feature for years. Across the board, the cooking respects tradition while making room for modern touches, giving the cuisine an international sensibility that never loses its local soul.
The restaurant takes its name from the cozy Bauernstuben – paneled dining rooms that feel like a farmhouse parlor. In warmer months, guests spill onto a summer terrace. For something truly unusual, there is “s’Wägele,” a tiny dining space that the owners call the smallest restaurant in the world. Whether you’re seated in the main room or in that miniature carriage, the service is personal and unhurried, befitting a place that has been feeding travelers for three centuries.
