A Family Tradition, Elevated

The Landhaus Wolf has been a family-run hotel in Schwäbisch Hall for four generations. Within its walls, the Gourmet-Restaurant Eisenbahn offers a dining experience that has earned a Michelin star and 16 points from Gault Millau – the latter calling it “Deutschlands letzte Eisenbahn die Freude macht” (Germany’s last railway that brings joy). The atmosphere is warm and relaxed, a setting where the kitchen’s Modern French cooking feels both ambitious and inviting.

The Kitchen’s Signature

The menu, titled “Menü Prestige,” unfolds as a progression of carefully composed courses. A cold-warm variation of duck liver pairs with local quince; seared scallops come with braised chicory and citrus. Glazed veal sweetbread appears with spring morels, and roasted lobster is served with Jerusalem artichoke, tomato, and a rich bisque. The main course offers a choice: the best of lamb with beans, couscous, and ras el hanout, or Loup de mer with pointed cabbage, mussels, and cauliflower. A Valrhona chocolate and lavender mousse, filled with ice cream in a cigarette pastry, closes the meal.

The Wine Cellar

The wine list at Eisenbahn is described by connoisseurs as a true treasure chest. Regional wines from Württemberg, Baden, and Franconia sit alongside top bottles from Burgundy, Alsace, and beyond. The cellar is curated to match the kitchen’s Modern French precision, ensuring every course finds its perfect companion. For private celebrations, the restaurant can host up to 80 guests.

Concept A tasting menu concept featuring 3 to 7 courses, with all dishes also available individually. Cuisine Style The "Eisenbahn" has long been a classic of haute cuisine in the Hohenlohe region. Thomas Wolf continues this proven style with an understated touch, while remaining fully open to modern elements. Foie gras has always been a fixed part of the menu here, currently presented as a cold-warm variation accompanied by an assortment of pumpkin. The cuisine takes a distinctly modern turn with the cured yellowfin mackerel served with radish, caviar, and a champagne vinaigrette. Back to classic territory is the Simmental beef fillet as the main course, paired with spinach, potato foam, and truffle glaze. Wine An extensive wine selection featuring a particular emphasis on top-tier red wines from Bordeaux and Italy, all at their peak drinking age, alongside excellent offerings from Burgundy, the Rhône Valley, Spain, and the New World. Atmosphere Refined country-house style with a bright interior, coffered ceilings, and classic charm. Verdict A timeless classic, consistently good over the years.
