The story
Within the Four Seasons Hotel at West Lake, Jin Sha serves traditional Jiangsu-Zhejiang cuisine – the refined culinary heritage of the region. Senior Executive Chinese Chef Wang Yong, with nearly three decades of experience, leads the kitchen with a philosophy that marries craftsmanship with generosity. Every dish, he believes, tells a story of terroir, memory and expertise.
The restaurant’s traditional architectural style and lively ambience open onto a stunning landscape garden, creating a harmony between human and nature. Chef Wang Yong draws inspiration from his travels, always excited to encounter local cuisines and chat with companions. His passion is expressed through boundless innovation using local and seasonal ingredients. The dining experience is complemented by fine tea, a premium wine selection, and Chinese yellow wine (huangjiu).
Standout dishes include Braised Pork Belly and Abalone with dried bamboo and sweet soy sauce; Sanmen Crab steamed with wine rice or soy sauce; and Crispy Half Chicken with spicy salt and soy sauce. Each plate reflects the chef’s unwavering pursuit of excellence.
Jin Sha holds one star in the Michelin Guide (2023–2026), ranks #85 on Asia’s 50 Best Restaurants List 2026, and is named one of the Tatler Best Asia-Pacific Restaurants 2025. It also earned three diamonds in the Black Pearl Restaurant Guide (2018–2026). The Michelin star affirms the kitchen’s high-quality cooking, while the broader accolades speak to its consistent place among Asia’s finest dining destinations.
