The story
At LIGИUM, the kitchen revolves around a wood-burning oven. Cooking over raw flames, the team nods to the historic food culture of the area while forging something new. The goal is straightforward: to showcase the quality and diversity of ingredients from the farmers, growers, and producers who raise them. There is no fixed menu online because the food is always in motion, tracking what the land and sea offer each week. The seasonal larder listed on the site gives a glimpse of what might appear on the current tasting menus.
Head Chef Danny Africano and his team have travelled across Europe and Ireland to find the best suppliers, products, and cooking methods. The result is a series of multi-course menus that change with the seasons. From Thursday to Saturday, guests can book “The Lignum Experience” – a 10-course tasting menu at €155, with an optional alcoholic drinks pairing for €115. On Saturday lunch and Sunday, a 5-course set menu is offered at €75. For those who prefer a shorter format, a 6- or 8-course tasting menu is also available. Note that vegan diets and milk-protein-free menus cannot be accommodated.
The dining room is deliberately unadorned: bare wooden tables and original barn walls. The service mirrors the food – refined but relaxed, unpretentious and fun. It is a place where the Michelin star feels earned through precision and honesty, not formality. LIGИUM stands in Bullaun, Loughrea, County Galway, surrounded by the landscape that supplies its kitchen.
