The story
Incàlmo, in Venetian dialect, means “graft” – the joining of two plants to create something stronger. This concept runs through the restaurant’s philosophy: a fusion of past experiences and new ideas, meeting and blending on the plate.
The kitchen follows a path described as “le gemme, i tralci, i semi” – the gems, the vines, the seeds. It is a balanced, rich, and plural approach where respect for raw ingredients guides every dish. The cuisine is Contemporary, rooted in the Veneto region but open to reinterpretation.
Located in Este at viale Rimembranze 1, Incàlmo offers both indoor and outdoor seating, with air conditioning and wheelchair access. The restaurant is part of a broader hospitality project that includes the Beatrice, a historic hotel in Este with original 1950s furnishings and a young, international welcome.
Incàlmo’s commitment to quality has earned it a Michelin Recommended distinction for 2026, a testament to its thoughtful contemporary cooking and warm hospitality.
