The story
In the small town of Montà, at the edge of the Roero hills, Marcelin offers a take on country cooking that is both rooted in tradition and open to invention. The restaurant describes its approach as “creativity, rich in flavours and tradition,” and the menus bear that out.
Guests can choose from several paths. The “Gli Immancabili” menu delivers the classics: hand-cut Fassona tartare with black truffle, tajarin with ragù, and braised veal cheek. For those wanting to explore further, the “La Degustazione” menu layers creativity, tradition, and innovation in dishes like a Swiss chard cream with truffle and scallop, or a playful “Guess Who! – Spring edition” dessert. The “Il Territorio” menu is a direct homage to Piedmont, featuring slow-cooked onion in a little pastry sac, free-range chicken cappelli pasta, and young pheasant with market vegetables. A “A Mano Libera” option lets diners compose their own three-course meal from the à la carte list.
Wine is central to the experience. Angelo Valsania, who welcomes guests, brings a deep passion for the cellar, researching and tasting directly with winemakers. The wine list is described as ever-evolving, spanning local labels alongside Italian and international bottles. Guests who discover a favourite during dinner can purchase it later through the restaurant’s online shop.
Marcelin also offers truffle-focused experiences, from a Black Truffle package with a guided hunt to a “White Gold” menu that pairs white truffle with three glasses of wine. These packages include an overnight stay, allowing guests to explore the Langhe and Roero at a relaxed pace.
The restaurant has earned a place in the Michelin guide, a recognition that aligns with its commitment to serious, ingredient-driven cooking. It is open for lunch Tuesday through Sunday, and for dinner Tuesday through Saturday. Pets are welcome.
