This is the promise of CiPASSO, a contemporary Italian restaurant in the heart of Rome. Located on via Metastasio 21, in a historic 1930s palazzo just steps from the Pantheon, it offers an experience rooted in authenticity and a passion for modern cuisine.

The restaurant was born in 2018 from the vision of founders Aurica Danalachi and Oleg Grossu. Their story—one of sacrifice, resilience, and a refusal to give up—is the foundation of CiPASSO’s identity. Today, the kitchen is led by Executive Chef Adriano de Angelis, a graduate of the Italian Chef Academy who describes his cooking as "emozione, semplicità e cura dei dettagli" (emotion, simplicity, and attention to detail). Chef de Angelis values experimentation and creativity, working with seasonal ingredients to create vibrant, visually striking dishes. Fresh black truffle is a recurring and prized protagonist on the menu.

The culinary philosophy at CiPASSO celebrates the richness of the Italian territory through a contemporary lens. The menu is a journey through seasonality, where each plate is designed to engage the senses. The wine program is equally considered, curated by sommelier Oleg Grossu, who selects bottles from across Italy to harmonize with the food. An ample selection of wines by the glass and bottle is available.

The atmosphere is described as international and refined, yet welcoming. The elegant interior dining room and the suggestive outdoor dehor (patio) allow guests to immerse themselves in the unique energy of the Eternal City. For the sixth consecutive year, CiPASSO has been selected by the prestigious Michelin Guide, a testament to its consistent quality and dedication. The restaurant is also a regular recipient of TripAdvisor’s Travellers’ Choice award, including the "Best of the Best" distinction.
